“This place makes a decent living. But, it’s laborious(多くの時間と労力を費やす) work to run a diner,” Mr. Diakakis said.
Running a small business like Bendix has always been precarious(おぼつかない). Weekdays are hit or miss, he said. Weekends are hectic(とても忙しい) (the diner regularly goes through 1,000 eggs). But it’s become even tougher in the last couple of years as rapid inflation has made operating costs unpredictable.
“After Covid, there’s been a lot of shifting. Week by week it’s different. Up until recently, a case of eggs had doubled, and when there’s news about the bird flu, a case will be as much as four times the cost.” As we kept track of every meal ordered that morning, Mr. Diakakis talked
A customer they call Mr. Ed ordered a short stack (重ねたもの)of blueberry pancakes. He made sure to say, “No bacon.”
Moments later, as the smell of bacon filled the diner, Mr. Ed called out(大きな声で呼んだ) that, on second thought, he wanted to order a side of bacon.

Eggs Benedict is a steal(お得) at $11.95. Mr. Diakakis estimated that the eggs, Hollandaise sauce, English muffins, home fries and Canadian bacon cost over $4. And that doesn’t include the cost of labor and overhead(諸経費) to run his restaurant.

When asked about the craziest things that have happened in the diner, Mr. Diakakis says: “Once a guy was nodding off --- maybe having an over dose. He got whisked off(座って眠ってしまう)by the EMT., and just as he gets to the ambulance, he comes to (正気に返る)and says, ’Wait, I need to eat my ham and cheese omelet.’”
