How NYC bagels are made | Time Out New York


Whenever I see pictures of bagels from other places that aren't New York, and they look just like bread in the shape of a bagel. It makes me instantly sad. I want to cry. Not a bagel.


ニューヨーク以外の場所のベーグルの写真を見るたびに、ベーグルの形をしたただのパンにしか見えません。一瞬で悲しくなるのです。泣きたくなるくらい。ベーグルじゃない。


Bagels are obviously popular in New York because of the huge Jewish community here.  We had a huge influx of Jews from eastern Europe in the late 1800s and early 1900s. With them came the bagel and as they got became such a huge part of New York. 


ベーグルが人気なのは、ニューヨークの巨大なユダヤ人社会があるからにほかなりません。 1800年代後半から1900年代前半にかけて、東ヨーロッパからユダヤ人が大勢流入してきました。そして、ベーグルはニューヨークで大きな一部となりました。


The bagel has gone through a bunch of changes in New York. Sometimes in probably I'd say the 60s or 70s, the bagel had morphed into kind of a larger size. So more like this came down to basically style, like H&H style. There are million bagel places. But H&H style, that means is the like a relatively large hole, relatively thin around, very chewy, relatively dense. And the other style was Ess-a, who I believe Ess-a was the pioneer of the doughy bagel.


ベーグルはニューヨークで何度も変化を遂げました。60年代から70年代にかけて、ベーグルはより大きなサイズに変化していきました。それで、これぐらいより大きな、結局、基本的にH&Hのようなスタイルになったんです。ベーグルのお店はたくさんあります。でも、H&Hスタイルというのは、穴が比較的大きくて、周りが比較的薄くて、とてもモチモチしていて、比較的密度が高いということなんです。もう一つのスタイルはエッサスタイルで、これは生地が柔らかいベーグルのパイオニアだと思います。


 So Ess-a started these bagels that were a lot puffier, higher. So an H&H bagel is maybe this high and Ess-a-bagel is maybe this high. And sometimes they would grow almost to where the hole would close up and that style got taken even further to bagels where the hole had completely closed up almost like closed up belly button.


それで、エッサはもっとフワッとした、高さのあるベーグルを作り始めたんです。H&Hのベーグルはこのくらいの高さで、エッサベーグルはこのくらいの高さなんです。そして、時には穴が塞がるくらいに膨らんで、そのスタイルはさらに進化して、穴が完全に塞がった、まるでおへそが閉じたようなベーグルになったんです。


I'm Melanie Frost. I'm the chief operating officer of Ess-a Bagel and we are here at our 32nd street store. I think the water is important but that's not the whole thing. So it's hand-rolled, boiled, and baked each and every day. And that's the way really any bagel should be prepared. So first of all, you've got to put all of the ingredients into the mixer which is the flour, the malt, the yeast, the salt, the water. You have to mix it all up and then once it's ready, the roller will then take that dough, and place it on our rolling table, and let it rest for a little bit, and then cut up the dough, and then we actually roll it.


私はメラニー・フロストです。エッサベーグルの最高執行責任者です。32番街の店に来ています。水は重要だと思いますが、それが全てではありません。毎日、手巻きで、茹でて、焼いています。それがベーグル作りのあるべき姿です。まず、小麦粉、モルト、イースト、塩、水などの材料をすべてミキサーにかけます。そして出来上がったら、担当者はその生地を取り出して、台の上に置き、少し休ませてから、生地を切り分け、そして実際に生地を転がして棒状にしていきます。


Now what I will tell you is that is a skill that is not something that happens overnight, and it is really incredible to watch how quickly they can do it as well. But after the bagel is rolled they're placed on a baking sheet, and we put cornmeal on that baking sheet. The reason for that is so that the bagels do not stick to the baking sheet. 


一朝一夕にできるような技術ではありませんし、彼らがどれだけ手早くできるのか見てください。本当にすごいです。ベーグルを巻いた後、ベーキングシートの上に置きます。ベーキングシートには、コーンミールを敷いておきます。ベーグルがボードにくっつかないようにするためです。


The next part is that they have to proof. And they get placed in the refrigerator overnight. So you take them out. We place them into the kettle. That's when they boil into the kettle and what happens is we actually the cornmeal goes into the kettle as well. So that's what makes the bagel shine. 


次に、発酵させなければなりません。そして、冷蔵庫に一晩入れておくのです。そして、それを取り出します。湯釜に入れます。このとき、コーンミールも一緒に釜の中に入れます。これがベーグルを輝かせるのです。


We wait till they float to the top so that we know that they're ready. Then they're placed on our wooden planks and that's when we actually sprinkle the seeds all over them. And then It's placed in the oven. And we have like a rolling oven which goes and it's at 450 degrees and then they're taken out and the're ready to go and the're fresh straight out of the oven. 


浮き上がるまで待つと、出来上がりです。そして、木の板の上に置いて、シードを全体に散らします。そして回るタイプのオーブンで焼くのですが、その温度は、450度です。それから取り出して、販売します。焼き立てですよ。




日本人が「コシヒカリのご飯」と「あきたこまちのご飯」について、ウンチク話をしているようなものでしょうか。。。どちらも美味しいのに変わりはないのですげれどね。( ´艸`)
