ニューヨークに来て、知らなかったお米のことを知る。

お米は「ごはん」。だけど、英語ではお米は"rice"でごはんは"boiled rice"です。しかし、"rice"だけの時が多いです。日本語では、「ごはん」が「食事」全体をさすときもあります。「おもてなし」や「もったいない」が"hospitality"や"waste"だけでは表せないように、「ごはん」も文化が基礎になっているので、なかなかずばりそのものを指す単語がないのは、当然のことです。

さて、日本のお米じゃないお米を目にして、いったい世界にはどんなお米があるのか調べました。次の英文は、
Wikipediaの、"List of rice varieties"（https://en.wikipedia.org/wiki/List_of_rice_varieties)からです。（一部省略しています。）

There are several grains called rice, which have been cultivated for thousands of years. Asian rice is most widely known and most widely grown, with two major subspecies and over 40,000 varieties.
「ライス」と呼ばれている穀物はいくつか種類があって、何千年にもわたって耕作されてきました。アジアのお米が最も広く知られていて、最も広く作られています。大きく２つに分けられますが、種類は４万種類以上あります。

The two subspecies of Asian rice, indica and japonica, can generally be distinguished by length and stickiness. Indica rice is long-grained and unsticky, while japonica is short-grained and glutinous.
アジアのお米はインディカ米とジャポニカ米の２つがあり、一般的に長さと粘りによって見分けることができます。インディカ米は長くて粘りがない、一方ジャポニカ米は短くて表面がネバネバしています。

On the basis of processing type, rice can be divided into the two broad categories of brown and white. Brown rice is whole grain, with only the inedible hull of the seed removed, while white (milled) rice additionally has the bran and germ removed through the process of milling. Milled rice may not necessarily actually be white in color; there are also purple, black, and red variants of rice, which can be eaten whole grain or milled.
製品にする上で、玄米と白米の２つに大きく分かれます。玄米は全粒で、ただ食べられない外の殻を除いただけのものですが、白米（挽いてある米）は、挽く過程でブラン（ぬか）と杯芽も取り去ります。挽いた米は、色が白とは限らないことがあります。また、紫や黒、赤いい米は、全粒のまま食べたり、挽いたりしても食べることができます。
